Daily Dining - Seared Tofu with Black Bean Salsa

This was last night's dinner. I actually did not make this simple yet delicious meal. Sean made this simple meal for us to enjoy. Lately, I have been eating incredibly unhealthy and then two nights ago it hit me that I could not do it anymore. I felt so disgusting eating (buffalo wings) that evening. Sean talked me into starting all over and doing a reset. I am trying to cut down my crappy eating by focusing on healthy food. I am going to put together a weekly menu of the food we eat and hopefully I can add the recipes to it from there.

I love tofu, believe me I do. I can live off of eating this everyday, but it has to be prepared differently. Otherwise, to me it would be eating the same meal everyday. I don't plan on eating or living off of tofu daily, but I plan on incorporating it as a huge part of my diet. My main goal is how many different ways can we cook tofu. How many different ways can we prepare it and serve it?

I am still debating if I should start a new fitness blog or just incorporate it here. Decisions, decisions..

  2. Did you photograph these photos? It looks delicious! Brady is the better cook of the two of us. I have cooked tofu a handful of times and failed. I try not to deprive myself from any food, but take a few bites. I try hard not to go overboard. I love beer and it really has been easy to say NO to it, but I had a can today.

    For me, I like to stick w/ one blog. I don't care if I write about various subjects. I can't focus just on one. I think it would confuse me and give me more "work." Lol. But if you can do it. Great for you!

  3. Delightful jump start back into healthy eating! Two great proteins with tofu and beans. Maintaining more than one blog is a nightmare. I think you could manage both exercising and eating healthy in one site. Take care, BAM

  4. One of the nice things about being back in our school routine and having the kids in school is that we are paying more attention to healthier eating again. I've never had seared tofu but it looks pretty good. I enjoy it once in a blue moon. Good luck with your fitness goals and eating healthy. :)

  5. I could eat black bean salsa all day long! YUM! I feel that way sometimes with eating too bad, then a few nights of clean eating gets in and I try to balance it out. Good luck!

  6. What a pretty vegan-friendly dish! I'm glad you are trying more healthier foods, it doesn't hurt to have these kinds of meals on a daily basis. Tofu is yummy, you can grill, roast, char, broil, braise, fry, or make it in soups. Coat it with whatever you like, crusted sesame seeds or panko.

  10. I think that would be a fun blog series to see how many different ways you can cook tofu! I know how you feel about feeling gross after eating too unhealthy for awhile; on my last road trip I felt so terrible after eating unhealthy food everyday that my body basically rebelled into a self imposed fast for a week lol

  12. @Emmy: Tofu is a big staple ingredient in our home. Though I don't eat meat as often I still do from time to time. I only know of very few ways to cook tofu. Whereas Sean knows almost a hundred ways or he can sort of just figure out what to do with it.

    The great thing about tofu is that you can pretty much substitute and meat in any meal with it. It's just as delicious and I want to incorporate my recipes around it for Fall.

  13. @Jean: I love when I just fry tofu and dip it with soy sauce and vinegar. I can eat that for days with rice, ha. I didn't like beer before but I love it now which is a problem that is all I drink nowadays.

    I think I am going to stick to one blog. I feel like multiple blogs is just more work for me.

  14. @Bam's Kitchen: After thinking about it all weekend I made the decision to stick to one blog. I don't want to end up confusing my readers or giving myself more work, lol

    My boyfriend pushed me to a great jump start to eating healthy. It's been a few days, but I think I have got it on lock down.

  15. @Susi: My son goes back to school next week and I am happy. Though I will miss him and won't be a part of his program it's nice to know that someone else is helping my son improve in his speech. (my son has a speech disability).

  16. @Pamela @ Brooklyn Farm Girl: Thanks. I try to think of if I will eat bad that I should limit what I eat. I think the hardest part for me isn't what I eat at home, but what I eat out. It's easy for me to look at a menu and easily just choose something bad like a huge greasy burger.

  17. @veganmiam.com: I usually try to accommodate my boyfriend's diet because I know it's healthier for me to eat and there are a ton more dishes to make with vegan meals. which is funny because i prefer a vegan meal over anything else.

    I'm not 100% vegan, but I might as well be due to my allergies to everything

  18. @elle sees: oh no! i'm sorry to hear that. I too have allergic reactions to tons of food such as dairy, poultry, rice, some meat, etc. it's funny because i might as well be vegan/vegetarian. tofu is pretty much one of the few proteins i am not allergic to.

    hopefully you will be able to try this one day

  19. @rooth: I am on the same boat. I actually was pretty much vegetarian for a year. Then for some reason dived into eating meat here and there and well I think I want to go back since I thoroughly enjoy tofu.

  21. @MizzJ: I think my body is doing that to me now. It's like every time I eat something unhealthy I start to feel icky and just sick. I hope to change that by eating tons healthier
